and Bocairent
With the morning mist at her feet, the castle of Xátiva stands high above the valley along a ridge overlooking a natural passageway from the coast to the interior of Spain. Heartland of the Borgia family, it has seen rich and opulent times as well as war and devastation. Burned to the ground in 1707 by the Spanish king Phillip V, and rebuilt, it has many surprises in its streets and castle.
Bocairent lies hidden in the Mariola Mountains, and is flushed by the river Clariano or ‘clear’ in English. Of Moorish origin, the town lies on a hill filled with caves and tunnels. Full of cats and curious people, Bocairent feels like another world where you can feel at ease as you walk along the ‘Magical Route’ under fig trees and between cave houses and vegetable patches. Don’t miss the Cuevas de los Moros and the Pou Clar mountain springs. Also try out the stuffed bell peppers and local casserole dishes.

Full of surprises, old and new architecture, quiet and peaceful, Valencia is a hand-sized city with much to enjoy and love. Get to see the Holy Grail or climb one of its medieval towers to enjoy the view. We can get down into the maze of streets and admire the alternative culture and street art. There are options for everything, including shopping, museums, cultural activities or gastronomy.
We may explore Spain’s biggest (and shallowest) lake to the South of Valencia. Here is where the Arab’s introduced the production of rice and other vegetables used in the Valencian paella. Ride a boat along the smooth waters and spot birds and fish as the local fisherman explains to you about life on the lake. Later we can try the local plates of All i Pebre (native eels cooked in garlic and tomato sauce) and paella valenciana cooked right here, in the birthplace of the paella.

For fans of Game of Thrones or Charlton Preston’s El Cid, you would not want to miss Peñiscola, the fortress and walled town that juts out into the Mediterranean. We may also explore the best coves and swimming spots to soak in the Mediterranean sun as we enjoy an ice-cream or seafood specialties. Other highlights could be: Alicante, Benidorm, Xabia, or Denia.

Would you like to learn how to make this Spanish dish in the traditional way? Join our chef as he shops for ingredients at the fresh food market. Then don your apron, because this meal will be cooked by you, in the kitchen as the chef gives you instructions. As the paella is slowly boiling, take a small break to try some local starters and drinks. When the paella is ready, we will move to the restaurant to enjoy your masterpiece and receive a certificate which you will keep as a memory of the fun and tasteful day!
